Juicy Chicken, Guaranteed!

April 16, 2014 By Marge Perry

Roasemary and Garlic Roast Chicken

The world is full of cooks with chicken anxiety. I have learned this from readers, students in my cooking classes, friends, relatives and strangers who overhear what I do for a living and ask me chicken questions. It actually happens a lot.

I get it: you want to be sure your chicken is cooked through to the point that it is safe; we all know undercooked chicken can make you horribly ill. But to be safe, cooks all across the country are cooking chicken long and hard—and turning innocent chicken breasts into menacing albino Gumbies. And really, no one wants to chew on Gumby.

Stop the madness! Chicken can be safe and juicy, tender and tasty. (Even boneless, skinless chicken breasts!) To prove it—and to save the universe from potential dry chicken devastation– I worked with the folks at Craftsy.com to create a video all about cooking chicken.

I spent a week in their studios in Denver, shooting lessons on how to:

  • roast a whole chicken
  • cut up/carve a chicken
  • spatchcock a chicken for skillet or grill
  • quickly and easily pound boneless chicken breasts
  • sautee boneless breasts to tender, juicy perfection
  • stuff and bake bone-in breasts (with only 5 minutes prep time!)
  • braise drumsticks in classic Italian flavors

The crew at Craftsy was great. Some of us worked very hard preparing dish after dish on and off camera:

Getting ready for it's beauty shot

smiling through the madness

Surveying the day's work

While others were busy texting:

Craftsy Cameraman

(Okay, so maybe he was waiting for the chicken to come out of the oven. )

And still others were busy photobombing:

Truth is, while we worked long, hard hours, we laughed a whole lot. Oh, and the crew ate rather well. There was:

Osso Bucco Drumsticks

Spatchcocked Oregano Chicken

Spatchcock Chicken (Skillet roasted)

And the crew favorite, Marge’s Very Special Buffalo Wings

Buffalo Wings (my way)

Lucky you going to my old hometown of Denver to work on chicken perfection! The drumsticks osso bucco look awesome. Are you in town over Memorial Day Weekend? Would love to try and connect again as we are planning a trip that week.

I make my living writing, teaching and speaking about food and travel. In the name of work, I (have to!) eat a lot, meet interesting people (many of whom, like me, are passionate about their work) and travel near and far to see where and how food is made, grown or raised. I am saved from a life of extreme obesity by the fact that I truly love to exercise, but I am always one forkful away from not being able to button my jeans. Mine is a sweet and savory life.

I share it with my husband and co-author, David Bonom. Check out our new book, Hero Dinners: Complete One-Pan Meals That Save the Day
