Let the subtle, sweet sea flavor of the cod shine through when you bake it with nothing more than a simple lemon shallot vinaigrette. Because sometimes simple really is better.
Greek Style Cod with Roasted Lemon
1 lemon, thinly sliced
1 tablespoon lemon juice
1 tablespoon minced shallots
1 tablespoon parsley, chopped
¼ teaspoon dried oregano
¼ teaspoon plus ½ teaspoon salt, divided
1/8 teaspoon black pepper
2 tablespoons extra virgin olive oil
1 ½ pounds cod filet, cut in 4 even pieces
- Preheat the oven to 425 degrees. Coat a large shallow baking pan with cooking spray.
- Place the lemon slices around the perimeter of the baking sheet and bake 7 minutes. Remove from oven.
- Meanwhile, make the dressing: combine the lemon juice, shallots, parsley, oregano and ¼ teaspoon of the salt in a bowl and whisk in the olive oil.
- Place the fish on the baking sheet, season with the remaining ½ teaspoon salt and pepper, and spoon the dressing evenly over the fish. Bake until the fish easily flakes with a fork, about 8-10 minutes. Remove from the oven and serve with the lemon slices.
