Every bit as good—if not better—than a fried fish sandwich, this healthier version might just convert non-fish eaters.

Warm Catfish Sandwich
1/2 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon ground coriander
1/8 teaspoon (or less) cayenne
1/4 teaspoon salt
4 (6-ounce) catfish fillets
2 teaspoons canola oil
1/4 cup tartar sauce
2 tablespoons light sour cream
2 teaspoons country style Dijon
4 lettuce leaves
8 tomato slices
4 hamburger or potato buns
- Combine paprika, cumin, coriander, cayenne and salt and sprinkle evenly over both sides of the fish fillets.
- Brush the oil lightly on the surface of a grill pan or cast iron skillet and heat over medium high. Add the fish and cook 4-5 minutes per side, or until the thickest part of the fillet just loses its translucency in the center.
- Meanwhile, combine the tartar sauce, sour cream, and mustard.
- Place a lettuce leaf on each bun bottom. Top with a cooked fish fillet, two slices of tomato, and the sauce. Close bun and serve warm.
