Crisp apple slices contrast beautifully with the melted cheddar and roasted turkey in this simple but surprisingly tasty sandwich. Leftover chicken breasts can substitute for the turkey.

Turkey, Apple and Melted Cheddar Sandwich
2 slices whole grain bread
3 ounces turkey breast
1/4th apple, cut in thin wedges
1 ounce thin slices low fat cheddar cheese
1 teaspoon butter
1 teaspoon prepared pesto (optional)
- Place the cheese in an overlapping layer on one slice of bread. Top with the turkey and apple. If desired, spread one side of the remaining slice of bread with the pesto. Close the sandwich.
- Melt half the butter in a small nonstick skillet set over medium heat. Lightly coat the bread with cooking spray and place in the skillet, pressing down on the sandwich to flatten it. Place a plate on top of the sandwich to weight it down, or simply continue pressing with a flat spatula, and cook 2-3 minutes, until the underside is browned and the cheese begins to melt. Slide the sandwich out of the skillet with a spatula and melt the remaining butter. Spray the top of the sandwich and flip it over in the pan, cooking another 2-3 minutes until the cheese is fully melted.
