Tofu and Green Bean Stir Fry

The sauce tastes and looks like the stir fry sauce from your favorite Chinese take-out. Serve this over quick cooking brown rice, (I like Uncle Ben’s Fast and Natural) for a quick and very healthful meal.

Tofu and Green Bean Stir Fry with Brown Sauce

1 tablespoon cornstarch

1 cup water

1/4 cup low sodium soy sauce

1/4 teaspoon Asian chili sauce

1 tablespoon sesame oil

5 garlic cloves, minced

1 1/2 tablespoons minced ginger

3/4 pound green beans, cut in 1-inch pieces

1 cup pre-shredded carrots

1 14-ounce container firm tofu, cut in 1-inch pieces

  1. Dissolve the cornstarch in 1 tablespoon of the water. Stir in the remaining water, soy sauce, and chili sauce and set aside.
  2. Heat the oil in a large non stick skillet over medium high heat. Add the garlic, ginger, and green beans and stir fry 1 minute. Add the carrots and tofu and stir fry 3 minutes.
  3. Briefly stir the sauce and add it to the skillet. Cook, stirring for 3-4 minutes, or until the sauce is thick and the green beans tender. Stir in the scallions and remove from the heat.

I make my living writing, teaching and speaking about food and travel. In the name of work, I (have to!) eat a lot, meet interesting people (many of whom, like me, are passionate about their work) and travel near and far to see where and how food is made, grown or raised. I am saved from a life of extreme obesity by the fact that I truly love to exercise, but I am always one forkful away from not being able to button my jeans. Mine is a sweet and savory life.

I share it with my husband and co-author, David Bonom. Check out our new book, Hero Dinners: Complete One-Pan Meals That Save the Day
