Tilapia with Tomato Basil Topping
1 1/2 pounds tilapia fillets
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 cup white wine
2 cups cherry tomatoes, halved
1/4 cup pitted calamata olives, coarsely chopped
1/2 cup parsley, chopped
1/2 cup basil, chopped
1 tablespoon extra virgin olive oil
- Preheat the oven to 425 degrees and coat a baking sheet with cooking spray.
- Place the fish on the baking sheet and season with salt and pepper. Sprinkle with the wine and bake 10 minutes, or until the fish is cooked through.
- While the fish cooks, make the topping: combine the cherry tomatoes, olives, parsley, basil and olive oil in a bowl. Season with salt and pepper if desired.
- Serve the topping spooned over the fish.
