Preheat the oven to 425 degrees and coat a baking sheet with cooking spray.
Place the fish on the baking sheet and season with salt and pepper. Sprinkle with the wine and bake 10 minutes, or until the fish is cooked through.
While the fish cooks, make the topping: combine the cherry tomatoes, olives, parsley, basil and olive oil in a bowl. Season with salt and pepper if desired.
Serve the topping spooned over the fish.
