1 head cauliflower, cut in bite size pieces
2 tablespoons extra virgin olive oil
1/4 teaspoon curry powder
1/2 teaspoon dried thyme
1/8 teaspoon cayenne (or to taste)
1/4 teaspoon salt
- Preheat the oven to 425 degrees. Coat a baking sheet with cooking spray.
- Toss the cauliflower with the olive oil; when it is thoroughly but lightly coated, toss in the curry, thyme, cayenne, and salt. Spread in a single un-crowded layer on the baking sheet. Roast in the middle of the oven until lightly browned and crisp-tender, about 20-22 minutes.
