Peanut butter gives these bars a little extra protein and helps stave off hunger until dinner time. Make them with whole grain cereal to boost their nutrition benefit. You can also stir in peanuts, raisins or even chocolate chips.

Peanut Butter Fluff Bars
2 tablespoons butter
2 cups marshmallow cream (or 1 7-ounce jar)
1/2 cup chunky peanut butter
6 cups Cheerios
- Coat a 13 x 9 inch baking dish with cooking spray.
- Combine the butter, marshmallow cream and peanut butter in a microwave-proof bowl. Microwave on high for 1 minute, then stir until smooth.
- Combine the marshmallow mixture with the cheerios and press into the baking dish. To make this easy, lay a piece of wax paper over the top of the bars and press down with the flat palms of your hands. Alternatively, coat a flat spatula or your hands with cooking spray and push the mixture flat down, slightly compressing it.
- Let the bars completely cool (about 20 minutes), then cut into 18 squares using a serrated knife. Stack between layers of wax paper.
