Lime, jalapeno, cilantro and cumin give these healthy salmon burgers Latino sizzle. They may also be cooked on the grill or in a grill pan.
Latino Flavored Salmon Burgers
1 jalapeno, seeds and stem removed
1/4 cup cilantro
2 scallions
1 1/2 pounds skinless salmon fillets, cut in 1-inch chunks
1 teaspoon cumin
1/8 teaspoon cayenne
3/4 teaspoon salt
1/2 cup plain breadcrumbs, divided
1/4 cup light mayonnaise
2 tablespoons lime juice
1/2 teaspoon lime zest
2 tablespoons olive oil
6 lettuce leaves
6 slices tomato
6 hard rolls, split
1. Chop the jalapeno, cilantro and scallion in food processor. Remove and place the fish, cumin, cayenne and salt in the work bowl. Pulse, stopping to scrape down the sides, until the fish pieces are no bigger than 1/4-inch.
2. Stir together with 1/4 cup of the breadcrumbs, mayonnaise, and lime juice and zest. Form the mixture into six patties. Sprinkle the patties on both sides with the remaining breadcrumbs.
3. Heat the oil in a large nonstick skillet over medium high. Add the patties and cook 3-4 minutes per side, or until the center just loses translucency.
4. Place a lettuce leaf on each roll, top with the salmon cake, sauce and a tomato slice. Serve immediately
