I use a cheese slicer on a block of low fat Cabot cheddar, which melts nicely and tastes great.

Jack-O-Lantern Quesadilla
For each quesadilla:
2 6-inch flour tortillas
2 ounces low fat cheddar cheese, thinly sliced
- Use the tip of a paring knife to cut the face of the Jack-o-lantern out of one of the quesadillas. Layer the cheese over the uncut quesadilla.
- Place the cut quesadilla in the skillet and cook until lightly browned, about 1-2 minutes. Remove and place over the cheese.
