Salted Edamame
1 pound bag frozen edamame (in the pod)
2 tablespoons coarse salt (or to taste)
Bring a large pot of water to a boil; add the (frozen) edamame and cook until the pods are bright green; 2-3 minutes.
- Drain. If serving immediately, simply toss with salt. To serve later, immediately rinse the edamame under cold water to stop the cooking. Pat dry and toss with the salt. Keep covered with a damp paper towel until serving.
Serves 4 as a snack
