Brownie Pie
Serve topped with ice cream or whipped cream and fresh berries or pomegranate seeds.
1 stick unsalted butter, cut in bits
2 ounces semi-sweet or dark chocolate (to taste), cut in bits
2 large eggs
1 teaspoon vanilla extract
1 cup sugar
¼ cup flour
½ cup pecans or walnuts, coarsely chopped
- Preheat the oven to 350 degrees. Butter a 9-inch glass pie plate.
- Melt the butter and chocolate together in the microwave or on top of the stove until it is nearly, but not fully, smooth. Remove from the heat and stir until smooth.
- Beat the eggs briskly with a fork until well-combined. Add the vanilla, sugar, and flour and beat again well-combined. Stir in the melted chocolate mixture and beat until smooth; stir in the pecans and transfer to the prepared pie plate.
- Bake about 25 minutes until a toothpick stuck in the center comes out with some crumbs still clinging; it should be slightly moist. Allow to cool before cutting in wedges to serve.
