An unusual and addictive appetizer that is an ideal accompaniment for a glass of wine or champagne on a summer afternoon. (It’s also a great prelude to a barbecue.)

Black Pepper-Goat Cheese and Honeyed Raspberries Crudités
8 ounce baguette, cut into 1/4-inch slices (about 20 slices)
4 ounces goat cheese
2 tablespoons skim milk
1/2 teaspoon course black pepper
2 cups raspberries
1 scant tablespoon honey
- Spray the tops of the bread slices with cooking spray or lightly brush with oil and toast in the oven or toaster oven until lightly browned. (May be done a day ahead).
- Mix the goat cheese and milk until smooth; stir in the black pepper. Spread on each toast.
- Top each toast with 2-3 whole raspberries; drizzle with the oil.
