All-American (Turkey) Meatloaf
2 large eggs
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/4 cups ketchup, divided
1/2 cup seasoned breadcrumbs
2 pound lean ground turkey
- Preheat the oven to 400F. Coat an 11 x 9 inch baking dish with cooking spray.
- In a large bowl, lightly beat the eggs with a fork. Stir in the garlic powder, oregano, salt and black pepper. Add 3/4 cup of the ketchup and the breadcrumbs and stir. Add the turkey and combine thoroughly without overworking the meat.
- Transfer the mixture to the baking pan and form into a 10-inch long by 5-inch wide loaf. Spread the remaining 1/2 cup of ketchup over the top of the loaf.
- Bake until a meat thermometer inserted into the center registers 165F; about 1 hour. Let stand 5 minutes before serving.
