Curried Peanut Slaw
4 cups shredded red cabbage (1/2 small head)
1 tablespoon plus 2 teaspoons apple cider vinegar, divided
1/2 teaspoon salt
1/4 cup reduced fat mayonnaise
1/4 teaspoon curry powder
1/8 teaspoon ground cayenne
4 cups shredded Napa cabbage (1 10-12-ounce head)
2 cups carrot matchsticks
1/3 cup peanuts, coarsely chopped
- Toss the red cabbage, 1 tablespoon of the vinegar and the salt together and set aside for 10 minutes or overnight.
- Combine the mayonnaise, curry powder, cayenne and remaining 2 teaspoons of apple cider vinegar.
- In a large bowl, toss together the red cabbage with the Napa, carrots and peanuts. Stir in the dressing until thoroughly combined. Taste, and add more salt and/or cayenne if desired.
Makes 8 servings (about 6 cups)
