Whole Wheat Couscous with Grapes, Olives, Feta, and Mint
1/3 cup golden raisins
1 cup whole wheat couscous
1/3 cup Kalamata olives, chopped
1/2 cup red grapes, cut in half
1/2 cup crumbled feta cheese
1/2 cup chopped scallion
2 tablespoons chopped fresh mint
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
1/4 teaspoon black pepper
- Combine 1 1/4 cups water and the raisins in a medium saucepan and bring to a boil. Stir in the couscous, cover, and remove from the heat; let stand 10 minutes.
- Use a fork to scrape the couscous into a large bowl. Stir in the olives, grapes, feta, scallions, and mint.
- In a separate bowl, whisk together the lemon juice, olive oil and pepper. Toss the dressing into the couscous.
