Tex-Mex Pepperjack Stuffed Burger

Avocado, salsa and pepperjack cheese make a healthful feast out of a simple lean burger.

Tex-Mex Pepperjack Stuffed Burger

1 pound lean (93%) ground beef

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup shredded pepperjack cheese

4 hamburger rolls

1/2 avocado, thinly sliced

1/2 cup chunky salsa

  1. Coat the grill rack with cooking spray and pre-heat.
  2. Combine the beef, salt and pepper; form into four balls. Indent the center of each ball and fill with 2 tablespoons of the cheese. Fold sides up and over to enclose cheese and form into 4-inch patties.
  3. Grill patties 4-5 minutes per side or to desired degree of doneness. Place a burger on the bottom half of each roll; top with avocado slices and salsa and serve immediately.
