The world is full of cooks with chicken anxiety. I have learned this from readers, students in my cooking classes, friends, relatives and strangers who overhear what I do for a living and ask me chicken questions. It actually happens a lot.
I get it: you want to be sure your chicken is cooked through to the point that it is safe; we all know undercooked chicken can make you horribly ill. But to be safe, cooks all across the country are cooking chicken long and hard—and turning innocent chicken breasts into menacing albino Gumbies. And really, no one wants to chew on Gumby.
Stop the madness! Chicken can be safe and juicy, tender and tasty. (Even boneless, skinless chicken breasts!) To prove it—and to save the universe from potential dry chicken devastation– I worked with the folks at Craftsy.com to create a video all about cooking chicken.
I spent a week in their studios in Denver, shooting lessons on how to:
- roast a whole chicken
- cut up/carve a chicken
- spatchcock a chicken for skillet or grill
- quickly and easily pound boneless chicken breasts
- sautee boneless breasts to tender, juicy perfection
- stuff and bake bone-in breasts (with only 5 minutes prep time!)
- braise drumsticks in classic Italian flavors
