Make this up to one week ahead and keep it in a tightly closed container in the refrigerator. And by all means, buy an extra bag of cranberries to stash int he freezer: they keep well for months.
Cranberry Orange Sauce
1 12-ounce bag cranberries
1/2 cup fresh orange juice
1 cup sugar
1 orange, peeled and chopped
1 teaspoon grated orange peel
1/2 teaspoon cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon salt
- Combine all ingredients in a saucepan and bring to a boil; reduce heat and simmer 12-15 minutes, until the cranberries are popped and somewhat disintegrated. Remove from heat, mash lightly with the back of your spoon.
- Cool and refrigerate until set, at least 2 hours.
