Citrus Marinated Olives
Turn a variety of olives into aomething more special (and beautiful) with the simple addition of citrus zest and rosemary

Citrus Marinated Olives
4 cups mixed variety olives
2 sprigs rosemary
1-inch wide by 2-inch long strips of zest from 1 orange
1-inch wide by 2-inch long strips of zest from 1 lemon
1-inch wide by 2-inch long strips of zest from 1 lime
3 tablespoons extra virgin olive oil
1. Combine all ingredients and let stand at least 2 hours, tossing occasionally.
Makes 4 cups
